Should be okay on the 15x8 depending on your backspacing. I ran 33x12.50 BFG MT on my stock 15x7 rims. Were okay except that the rubbed the leafs in the back when flexxing and also rubbed my front skid plate and control arm

well im not sure the backspacing of the wheels but i do have 1.5 inch wheel spacers and i've got a 3 inch rough country lift on now but i have a 4.5 long arm coming in the mail along with a 2.25 coil spacer im planning to add so i could wait. my fenders are cut pretty high too i think ill just go for it. i only plan to run these tires until winter.

I don't think eight inch wheels were ever an option on cherokees. Are you sure they're stock? Either way (7" or 8") i think you'll be fine with an 11.5" tire. You will need to trim up those fenders (if you haven't already). Not sure on the clearance for the lca but those spacers should certainly help.

I had a set of factory turbine wheels with 32 11.50 15s. They rubbed the control arm a little bit. Not enough to be concerned.

You'll be fine with 15X8s. Most likely you have 3.5"- 3.75" of BS.
