My only advice is keep a dvom a pair of alligator clips and a small sewing needle with you and when the problem happens start back probing for voltage.

I had a similar stalling problem mine would die after getting off the highway. Turnd out to be my fuel pump was failing. Might take a second look at your fuel systems.
