I had a high flow thermostat and it was causing the same issue with running hot at speed, I think it has something to do with to much flow not letting the radiator cool the coolant...

How is your radiator? I can turn all my fans off if I am driving over 40 mph due to ram air effect, I actually run around 180* at 70mph!!
