I have seen this done in other forum....
OK so I like food, I like good food too can't really help.

We have people from different parts of the world with different culture and I though it could be cool to see what are we all eating (and share recipe too)

So let's share..... as long as it is made from scratch

So I am starting this by what I made for dinner last night:

Fresh green asparagus with home made Hollandaise sauce
Juicy Rolled omelette

Tortilini in Alfredo sauce, home grown organic chard cooked in garlic and butter, lemonade from home grown lemons.

Tomorrow we will have my son and granddaughter again. The girls will cook a real treat. This stuff is to die for.


Garlic Onion Tortilla Cake
Recipe courtesy Guy Fieri

16 portions

Ingredients
2/3 cup canola oil
4 cups small chopped red onion
3 tablespoons butter
2 tablespoons sugar
3/4 cup roasted garlic, from jar
5 tablespoons grated Parmesan
1/4 cup mayonnaise
3 tablespoons minced cilantro leaves
Salt and pepper
12 flour tortillas
2 tablespoons balsamic vinegar
Directions
In a large skillet over medium heat, heat the oil. Add the onion and cook for 5 minutes, stirring to caramelize but not over brown. Add butter and sugar and cook until onions have nicely caramelized, about 15 minutes. Remove from heat and cool.

Once cooled mix together the remaining ingredients except for the tortillas and vinegar; refrigerate for at least 4 hours.

After mixture has had time to meld, set aside 1/3 of the mixture for the dipping sauce and evenly spread the remaining mixture on the top of 11 tortillas. Stack the tortillas on top of one another, with the last tortilla on top having no mixture spread on it. Wrap tortilla stack in plastic wrap and let set up for 12 to 24 hours in refrigerator.

Heat a grill heat. Cut the stack into 16 wedges. Grill each wedge on each side until warmed and grill marks appear. Mix reserved mixture with balsamic vinegar for dipping sauce. Serve tortilla wedges with dipping sauce

Wife made tacos for last night, night before was marinated pork steaks, fresh salad and grilled veggies. wife is a licensed chef, I tend to stick to my side box smoker/grill to cook most anything.

Yeah I cook everything on the grill and everyone but me is sick of it. I'm not as grill everything stupid as bobby flay but I hate making a mess in the kitchen and I enjoy watching the smoke and drinking an:spongebob: adult beverage and listening to the radio.

Hi,
Ok, here is the recipe, I tried to translate it, if something still not clear, let me know...

2 cups of Hummus granules (not cooked) - put it in water for 12 hours before.
1/2 cup of fresh coriander
1/3 cup of fresh parsley
2 slices of bread
2 spoons of sesame
1 spoon of paprika
1 tea spoon of salt (some people like it with a little more)
1 tea spoon of Baking soda
** you may add hot pepper if you want it spicy...

Put the hummus (without the water) and all the other components in a food processor, add some water till it becomes a pulp that can be shape to small balls.
Hit a deep oil, you may use spoons to make the balls if you don't want to do it with your hand (there is a special tool for that, but spoons are cool too :) )
Let it stay in the oil till it becomes a nice brown (you may need to roll it over few times in the oil)

Eat it while it is hot...
Next time, how to make your own hummus (nice recipe too)

But I like to cook.... my dream ? opening a restaurant...

Steve ? Do you have a very large garden to have all these "unusual" veggies homegrown ? I love artichokes.... the artichke is the true food for poor people because this is the only dish that leave more in your plate after you eat it

Greens out of a newly opened jar, Home made Mac&Cheese, Hamburger Steak & Gravy w/ Chopped Onions & Garlic, Fresh out the oven Biscuits! Sure made for some good eating tonight.

Steph, Guy Fieri is a real gourmet cook. This is one of the recipes from his restaurant fare. And get this, he has another one that is a totally different theme. You can get all his recipes on line if you know what to call it. We had some really good mashed potatoes that needed nothing on them. That is on our list of things to ferret out and cook next.

I love his show drive dinners and dived (I think lol) he is very energetic guy....
that is a good tip.... I always try to cook french because this is what i know but ingredients are difficult to find most of the time.... and I like new stuff...

I have said it in chat already but I am dying to try possum stew or whatever lol

here are 2 traditional recipe from France for meat lovers (pork) that are willing to experiment something original....
If you are anything like my wife, pass on because it will gross you out...

First the Rillettes
Rillettes - Wikipedia, the free encyclopedia

I scored a nice full pork belly at the butcher shop.... got about 2/3 of it (11lbs) and chopped it in big cubes.

cooked the meat at about 350 in a dutch oven for 4 hours with nothing but Salt and pepper.

then let cool off and stand over night.... it is cold enough at night here that I just left it outside ;)

Take inside and by hand, sort the meat removing pieces of bones, cartilage, skin, the white fat deposits as well as the pieces of fat that didn;t melt totally with cooking etc... and reserve.... I usually take this step to break the fibers by hand (it is a messy part)

Then in a mixer equipped with a flat paddle, mechanically break and mix the meat and fat (also known as lard by the way ;)).....

when this is done, put the mixture in molds and place in the fridge for at least 2 or 3 days.... you can conserve it for a couple of month in the fridge. You can pot it and sterilize it or like I did, vacuum seal it and freeze...

Enjoy on toasted country bread with a couple of dill pickles and a cup of red wine ;)


with the wastes that you reserved (you did reserve that right ? ) you put it back on the stove and melts everything then filter the fat and let it solidify... you made your own lard that you can use for cooking or seasoning your cast iron pots and skilets.....

Second one: le Fromage de tete (known here as Head cheese...)

it is basically a pig head meat / skin / fat / tongue/ brains.... all cooked together and molded to form a pate with the jelly created from the cooking broth...

first cook the head for about 3 hours in a very strong broth....

then remove the head (and chop everything that fell of the bone.... you should be left with only the skull) and with a big knife choppe everything in medium to big chunks.

filter the broth and keep the carots.... slice them up and add to the meat / skin / stuff with a couple of sliced dill pickles and chopped flat parsley.
Put the broth back on the stove to reduce to about 2/3
place the meat in molds / bowls then in the fridge.
when the broth reduced is just lukewarm, add a cup of cognac or white wine, and pour it over the meats in the bowl/molds.... place in the fridge and wait for a couple of hours for the jelly to be totally done. you can add some jello in it before if you want to make sure it will hold the meats...

and then enjoy ;)

One of my favorite things to have is sandwiches made from Boars Head meats.

Roast Beef, Cajun Chicken and Honey Maple Ham (paper thin sliced). Lettuce tomato pickles and avocado with sweet honey mustard (spicy) and a thick slice of boar's head jalapeno pepper jack cheese (#3 sliced please!)

Then pile the meats high by folding them on to the bread.

Babbins, it's a Louisiana Cajun style seafood restaurant.

My wife and I had tuna steak, blackened, medium well with Babins topping. The topping is a meal un to itself!

She had a fully loaded baked potato (which she didn't touch) and broccoli.

I had a fully loaded backed potato and asparagus.

One daughter was working, so only my youngest daughter was with us. She had a Ceaser's Salad. She doesn't like seafood. Yeah I know! :out:

If it makes you feel any better, my MIL was in all last weekend, and will be in all this coming weekend. And my FIL has came in last Friday night and will be here until atleast next Sunday.

Went out to a real nice buffet w/ the in-laws, and family on that side of the family... Not just any buffet though.. it was a like $50+ a plate buffet!! Awesome food!!

I won't say it was the greatest thing in the world.. but it was def. really good.. If I were paying for it... I would have been eating over @ McDonald's.. LOL.. Trust me.. My wife and I were the only two walking around this place in a pair of Jeans, and hoodies.. kept getting some evil looks.. would have made it even better had I been able to drive my muddy ass XJ up there and park it near all the Caddy's, Lincolns, Mercs, etc....

I love doing things like that. What's even better is to be sitting next to a "luxary" car in traffic and look down at the driver making eye contact with a look of utter disgust on your face. That really pisses them off and bruises their ego's.
